Mmmm . . . Delicious

Several months ago my friend Anneli brought us a pot of tortilla soup for dinner. It was delicious, and even enjoyed by my children. She gave me the recipe, and it's become a family favorite. Today in the east it's going to be rainy, windy and chilly, a perfect day for warm yummy soup. If it's feeling like fall were you live, cook up a pot for your family and ENJOY!

Tortilla Soup

1 yellow onion
cilantro (about 1/3 of the bundle)
1 tsp minced garlic
1 can of diced or stewed tomatoes
1/2 tsp cumin
1 tsp crushed red pepper
4 cups chicken broth
2-3 chicken breasts, cooked and shredded

Fry the sliced onion, chopped cilantro and garlic in a little bit of oil. Puree this mixture with the tomatoes in a blender. Return the sauce to the frying pan and add the cumin. Simmer 5-6 minutes until the sauce thickens. In a seperate pot, bring the chicken broth to a boil, add the red pepper, chicken and sauce (some people also add corn.) Simmer 15-20 minutes to blend the flavors. Serve with tortilla chips and a little cheddar cheese on top.

I LOVE that soup!! Yum! Someone made it for me after the birth of my last baby and it never tasted sooo good! After seeing your picture I'm going to have to try and make some myself.

Oh, gosh...I was going to make a very similar recipe last night, and didn't feel up to it. I LOVE soup. Anyway...you must have great light in your kitchen, because if I took these in mine, it would look more like McDonalds or something. Now I'm off to compare your recipe to mine!

So I guess I never commented on this, but I've been eyeing it since you posted... Maybe I'll give it a try soon. The weather is kicking in for soup around here. Looks delicious.
